This brewery will convince you that "terroir" can apply to beer, not just wine. By specializing in wild fermentation, Black Project imparts a sense of place to each beer they produce because they ferment with microbes captured from the local environment. They use different fermentation vessels from beer to beer, such as stainless steel, wine barrels and rum barrels. They are also known to incorporate fruit, such as grapes from Western Colorado.
